Ingredients

1 lamb shoulder ( approx . 21/2 kg )
4 shallots , halved but not peeled
6 garlic cloves
1 carrot , peeled and halved
maldon salt
500 ml boiling water
1 small handful freshly chopped mint
1 pomegranate

Instructions

1.Preheat the oven to 200°C/180°C fan/gas mark 6.
2.Place the lamb shoulder in a roasting tin, and around the lamb add the shallots, garlic, and carrot. Sprinkle some Maldon salt on the lamb, rub it in, and add boiling water to the roasting tin.
3.Cover the tin with a layer of foil, crimping the foil tightly around the edges of the tin.
4.Roast in the preheated oven for 4 hours.
5.Remove the foil and continue cooking for 30 minutes more, or until the lamb is golden brown and tender.
6.Remove from the oven and let it rest for 15 minutes.
7.Once the lamb has rested, carve it into large pieces, discarding any excess fat or bone.
8.In a large bowl, mix the lamb slices with freshly chopped mint and pomegranate seeds. Serve immediately.
