Ingredients

2 lbs boneless lamb ( about 1.5 lbs after trimming fat ) or 2 lbs pork ( about 1.5 lbs after trimming fat )
1/4 cup olive oil
2 teaspoons garlic , minced ( from a jar is fine )
1 tablespoon dried oregano
1/2 teaspoon dried rosemary
salt and pepper
2 tablespoons fresh lemon juice
1 tablespoon red wine ( Or red wine vinegar )
1 medium red onion
2 assorted coloured bell peppers
6 bamboo skewers

Instructions

1.Cut the lamb or pork into small cubes, discarding any visible fat, and place in a bowl.
2.In a separate bowl, whisk together the olive oil, minced garlic, dried oregano, dried rosemary, salt, pepper, lemon juice and red wine.
3.Pour the marinade over the meat, and stir until all of the meat is coated.
4.Let the meat marinate in the refrigerator for at least an hour, or up to 4 hours.
5.Cut the onion and bell peppers into small pieces and set aside.
6.Soak the bamboo skewers in warm water for at least 30 minutes.
7.Thread the meat and veggies onto the skewers, alternating between meat and vegetables, and leaving a little room at the top and bottom of each skewer to make them easier to handle.
8.Preheat the grill to high heat.
9.Grill skewers until meat is cooked through, about 8 to 10 minutes, turning occasionally. Serve with fresh veggies and a squeeze of fresh lemon juice.
