Ingredients

1 tablespoon olive oil
1 small brown onion , finely chopped
2 garlic cloves , crushed
500 g ground lamb
1 lemon , juice of
2 teaspoons dried oregano
1 quantity quick pizza dough ( see related recipe )
200 g halloumi cheese , drained , thinly sliced crossways
1/2 cup pitted kalamata olive
2 tablespoons flat leaf parsley , chopped
tzatziki , dip to serve
lemon wedge , to serve
Lamb, Olive and Haloumi Pizza is a classic Mediterranean recipe that adds a twist to the traditional pizza using middle eastern flavors. Its unique combination of flavors and textures makes it an exciting pizza that is sure to wow guests and friends. Instructions

1.Preheat oven to 220C/200C.
2.Heat oil in a frying pan over medium-high heat.
3.Add onion and garlic. Cook for 2-3 minutes or until softened.
4.Add lamb and cook for 5-6 minutes or until browned and cooked through.
5.Add lemon juice, oregano, salt and pepper. Cook for a further minute.
6.Roll out pizza dough to 30cm. Put the pizza base onto a baking paper lined tray.
7.Top the pizza base with the lamb mixture, halloumi, and olives.
8.Cook for 10-12 minutes or until base is crisp and cheese melted.
9.Sprinkle with parsley and serve with tzatziki and lemon wedge.
