Lamb kabobs are a popular dish in many Middle Eastern countries and are often flavored with spices like cinnamon and cumin. In this recipe, the lamb is marinated in a blend of olive oil, onion, and cinnamon and then skewered with turkish figs. The skewers are then grilled to perfection until the lamb is crispy on the outside and tender on the inside. Roasted beets, an earthy root vegetable, are a perfect companion to the lamb, and their bright red color adds a pop of color to the dish. These kabobs are sure to be a crowd-pleaser at any summer barbeque.

Instructions

1.In a small bowl, mix together the chopped onion, olive oil, cinnamon, salt, and pepper to make a marinade.
2.Add the cubed lamb to the marinade and toss to coat. Cover and refrigerate for at least 2 hours, or overnight if possible.
3.Preheat the oven to 425 degrees F. Cut the beets into quarters and arrange them in a single layer on a baking sheet. Drizzle with balsamic vinegar and orange juice and season with salt and pepper.
4.Roast the beets in the oven for 15 minutes.
5.Thread the marinated lamb cubes onto skewers, alternating with the figs.
6.Grill the lamb kabobs on a hot grill or griddle for 3-4 minutes per side, or until cooked to your liking.
