Ingredients

750 g lamb ( can substitute chicken )
1 large onion , finely chopped
ghee or oil
2 inches fresh ginger , finely chopped
2 garlic cloves , finely chopped
4 fresh tomatoes , chopped ( or 1 can of tinned tomatoes )
500 g frozen chopped spinach ( fresh spinach works fine too )
4 tablespoons fresh coriander , chopped
4 cloves
2 brown cardamom pods
1 teaspoon cumin seed
1/2 teaspoon turmeric
1 teaspoon chili powder
1/2 teaspoon ground black pepper
1/2 teaspoon ground coriander
1 teaspoon garam masala
1 tablespoon dried fenugreek leaves ( optional )
Lamb in Pureed Spinach (Saag Gosht) is a popular North Indian dish that is made using lamb or chicken cooked with pureed spinach and aromatic spices. Instructions

1.Heat the ghee or oil in a large pot, add onion and cook until brown.
2.Add ginger and garlic, cook for 1 minute.
3.Add cloves, cardamom pods, cumin seed, turmeric, chili powder, black pepper and ground coriander, cook for 1 minute.
4.Add the lamb and cook until brown.
5.Add chopped tomatoes and cook for 5 minutes.
6.Add the frozen spinach and salt, cover and cook for 25-30 minutes until the lamb is fully cooked.
7.Add garam masala and dried fenugreek, cook for a further 5 minutes.
8.Serve hot, garnished with fresh coriander leaves.
