Ingredients

4 kg lean lamb shoulder
1 large onion , peeled and quartered
2 sticks celery , chopped
1/4 teaspoon dried rosemary
1 2/3 liters water
570 ml red wine
450 g button onions , peeled
115 g all-purpose flour
4 tablespoons anchovy puree
300 g button mushrooms
50 g walnuts , chopped
salt & freshly ground black pepper
chopped parsley
Lamb in Anchovy and Wine Sauce is a classic dish that originates from Italy. The combination of lamb, anchovies, and red wine create a warm and rich flavor that soothes the soul. Instructions

1.Preheat the oven to 350F.
2.Season the lamb with salt and black pepper.
3.In a large oven-safe pot, brown the lamb on all sides over medium heat.
4.Remove the lamb and add in the onions, celery, and rosemary. Cook until the onions are translucent.
5.Add the lamb back to the pot with 2/3 liters of water and 570 ml of red wine.
6.Bring to a boil, lower the heat, and let it simmer for 2-3 hours or until the meat is tender.
7.In a separate pan, sauté the button onions and mushrooms until lightly browned. Add them to the pot with the lamb.
8.Mix the flour and anchovy puree together and add it to the pot. Mix until well-combined.
9.Add the chopped walnuts and simmer for 30 minutes until the sauce has thickened and the lamb is tender.
10.Season with salt and pepper to taste and garnish with chopped parsley before serving.
