Ingredients

12 lamb cutlets
24 asparagus spears
2 tablespoons olive oil
2 tablespoons lemon juice
12 cherry tomatoes , quartered
125 g feta cheese , crumbled

Instructions

1.Preheat the grill to high or turn the oven to 220°C fan/gas mark 7.
2.Put the asparagus in a shallow roasting tin and drizzle with 1 tablespoon of olive oil.
3.Season the lamb cutlets with salt and pepper and brush them with 1 tablespoon of olive oil mixed with the lemon juice.
4.Grill the lamb cutlets for 3 minutes each side for medium-rare, or 4 minutes each side for medium-well done. Alternatively, roast them in the hot oven for 8-10 minutes.
5.Add the quartered cherry tomatoes to the roasting tin with the asparagus for the last 5 minutes of cooking.
6.Divide the asparagus between four plates and sprinkle over half the feta.
7.Place the lamb cutlets on the plates with the asparagus, tomato, and crumbled feta. Serve immediately.
