Ingredients

4 -8 lamb loin chops
1 dash extra virgin olive oil
Dijon mustard ( to brush onto chops )
salt & freshly ground black pepper
1 dash dried thyme
1 dash dried sage
1 dash dried parsley
1 dash garlic granules
1 dash dried rosemary , crushed
2 cups white rice ( made as directed on the box )
1 teaspoon cumin
1/2 cup golden raisin
1 teaspoon lime juice
2 tablespoons fennel seeds
1 tablespoon rosemary ( crushed )
1 1/2 teaspoons curry
1 tablespoon anise seed
1 teaspoon sugar
salt and pepper
1/2 cup sunflower seeds or 1/2 cup pine nuts ( toasted and crushed )
2 eggs ( slightly beaten )
2 tablespoons butter
3 cups water
Lamb chops and Middle Eastern rice is a flavorful and nutritious recipe that brings the taste of exotic spices and herbs to your palate. Instructions

1.Preheat oven to 375°F (190°C).
2.Season the lamb chops with salt, black pepper, dried thyme, dried rosemary, dried parsley, garlic granules, and dried sage.
3.Heat olive oil in a large skillet over medium-high heat. Add the lamb chops and cook until browned on both sides (about 2-3 minutes per side).
4.Brush Dijon mustard onto each chop and transfer to the preheated oven. Bake for 12-15 minutes or until cooked to your preferred level of doneness.
5.In another skillet, toast the anise seed, fennel seed, and crushed rosemary over medium heat until fragrant.
6.Add water to the skillet and bring to a boil. Stir in white rice, cumin, curry, sugar, and golden raisins.
7.Lower the heat to a simmer and cook for 18-20 minutes or until the rice is tender and the liquid is absorbed.
8.In another skillet, toast the sunflower seeds or pine nuts for 2-3 minutes or until fragrant.
9.Mix the rice with lime juice, toasted seeds, and butter. Serve the lamb chops with the Middle Eastern rice.
