2 pounds boneless lamb shoulder , cut into serving-size pieces
2 tablespoons butter
1 onion , diced
1 cup water
salt and pepper to taste
1 teaspoon ground cinnamon

4 quinces - washed , cored , and quartered

Instructions

1.In a large Dutch oven, heat the olive oil over medium-high heat. Add the lamb shoulder and cook until browned on all sides. Remove the lamb from the pot and set aside.
2.In the same pot, melt the butter and add the diced onion. Cook until softened.
3.Return the lamb to the pot with the onion. Add the water, salt, pepper, cinnamon, and sugar. Stir to combine.
4.Arrange the quince pieces on top of the lamb, then cover the pot with a tight-fitting lid.
5.Reduce the heat to low and simmer for 2-3 hours, or until the lamb is tender and falling apart.
6.Remove the lid and increase the heat to medium-high. Allow the sauce to reduce and thicken for 10-15 minutes. Serve hot.
