Ingredients

400 g ground lamb ( NZ lamb is the best )
2 tablespoons plain yogurt
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon ground coriander
1 pinch cayenne
1 pinch black pepper
2 teaspoons oil or 2 teaspoons butter , if needed
1 spring onion , sliced
1 clove garlic , crushed
1 large tomatoes , diced
salt and pepper
mint or coriander leaves
Lamb and Yoghurt Patties are a perfect balance of flavors and textures. They are juicy, meaty, and slightly tangy from the yogurt. Instructions

1.Preheat a nonstick skillet over medium heat. In a bowl, combine ground lamb, plain yogurt, salt, cumin, coriander, cayenne, and black pepper.
2.Mix until everything is evenly distributed.
3.Divide the mixture into 6 equal portions and shape into patties.
4.Add oil or butter to the preheated skillet. Cook the patties for about 5 minutes on each side or until cooked through.
5.In another pan, heat oil over medium heat. Add spring onion and garlic. Cook until they are softened about 4 minutes stirring occasionally. Add tomatoes, salt and pepper and cook for an additional 1-2 minutes.
6.Serve the cooked patties topped with the tomato onion mixture and garnished with mint or coriander leaves.
