Ingredients

1/2 cup olive oil
1 leg of lamb , boned , cut into 1 1/2-inch chunks and patted dry
2 lbs ripe tomatoes , chopped
1 medium onion , studded with 5 whole cloves
2 large garlic cloves , minced
2 tablespoons tomato paste
1/4 teaspoon cinnamon
1 pinch sugar
salt & freshly ground black pepper
1/2 cup butter
1 lb orzo pasta ( rice-shaped pasta )
3 cups water
1/2 cup freshly grated kefalotyri ( a Greek cheese ) or 1/2 cup parmesan cheese

Instructions

1.Preheat oven to 350°F (175°C).

5.Cook for 5 minutes, or until the tomatoes are soft.

7.In the same pot, melt the butter over medium heat.
8.Add the orzo and cook for 2 minutes, or until the pasta is coated with the butter.
9.Pour the orzo over the lamb mixture.
10.Add the water and grated cheese on top.
11.Cover the dish with aluminum foil and bake for 1 hour.
12.Remove the foil and bake for another 30 minutes, or until the orzo is tender and the cheese is browned.
