Ingredients

3 lbs lamb , cubed
6 ounces butter beans , soaked overnight
1 pint water
1 teaspoon salt
1 inch fresh ginger , chopped
4 garlic cloves , chopped
4 tablespoons oil
1 large onion , chopped
3 dried red chilies
2 cinnamon sticks , broken up
1 1/2 teaspoons ground coriander
2 1/2 teaspoons ground cumin
1 teaspoon turmeric
1/4 teaspoon chili powder
2 tablespoons tomato puree
3 black cardamom pods , split open
5 cloves
1/4 pint warm water
1/2 lemon , juice of
coriander leaves ( optional )
Lamb and Butter Bean Curry is a classic recipe that is popular all around the world. Instructions

1.Rinse the lamb cubes and set aside. Soak the butter beans overnight in cold water and then drain.
2.Heat 2 tablespoons of oil until hot, then add the lamb cubes and stir-fry for 2-3 minutes or until browned. Remove from the pan and set aside.
3.In the same pan, heat the remaining 2 tablespoons of oil and fry the onions until translucent. Add the dried red chilies, cinnamon, coriander powder, cumin powder, turmeric, and chili powder. Cook until fragrant.
4.Add the ginger, garlic, lamb, tomato puree, black cardamom pods, cloves, and water. Mix well and bring to a boil. Add a teaspoon of salt and simmer for 1 hour or until the lamb is tender.
5.Add the butter beans and 1/4 pint warm water. Cook for another 10-15 minutes or until the beans are tender. Add lemon juice as per your taste.
6.Garnish with coriander leaves if desired and serve hot with steamed rice or bread.
