500 g ground lamb
35 g taco seasoning mix

420 g Mexican chili beans ( or mexibeans in Australia )
1/4 cup water
240 g plain toasted corn chips
1 cup grated cheddar cheese
2 medium avocados , mashed
1/2 cup sour cream
4 large egg tomatoes , chopped finely
1 small red onion , chopped finely
1 tablespoon olive oil
1 tablespoon lemon juice
1 garlic clove , crushed
2 tablespoons coriander leaves , finely chopped

Instructions

1.Heat the oven to 200C (180C fan)/400F/gas 6.

5.Cook for 5-10 minutes until the mixture has thickened slightly.

7.Spoon the lamb mixture over the corn chips, and sprinkle with grated cheese.
8.Bake for 10-12 minutes, or until the cheese is melted and bubbly.
9.Mix the mashed avocado and sour cream in a small bowl, and set aside.
10.In a separate bowl, combine the chopped egg tomatoes, onion, olive oil, lemon juice, garlic and coriander to make the salsa fresca.
11.Serve the nachos hot with the avocado and sour cream mixture, and the salsa fresca on the side for dipping.
