Instructions

1.Heat 1 tablespoon olive oil in a large saucepan over medium heat.

4.Add chopped tomatoes and sugar and bring to boil, then reduce heat to low and simmer, stirring occasionally, until the sauce has thickened, for about 20 minutes.
5.Once done, remove saucepan from heat and stir in fresh mint.
6.Meanwhile, preheat oven to 375 F°.
7.In a large bowl, combine ground lamb, dried apricots, breadcrumbs, salt, and pepper.
8.Using your hands, shape mixture into 12 meatballs.
9.Heat remaining 1 tablespoon olive oil in a large skillet over high heat.
10.Add meatballs and cook, turning occasionally, until browned on all sides for 5-7 minutes.
11.Transfer meatballs to a baking dish and pour tomato sauce over them.
12.Cover baking dish with foil and bake until meatballs are cooked through, for about 10-15 minutes.
13.Garnish with fresh mint and serve hot.
