25 g fresh yeast
1 teaspoon sugar
500 g bread flour
1 teaspoon salt
20 g butter ( melted )
2 tablespoons olive oil
1 red onion
500 g lean ground lamb
1/2 teaspoon ground cinnamon
15 g flat leaf parsley ( chopped )
120 g canned tomatoes ( chopped or pureed )
1 lemon , juice of
chili flakes
Lachmajou is a traditional Middle Eastern dish that is similar to pizza in its shape and texture. Instructions

1.Preheat the oven to 475°F (245°C).
2.In a small bowl, mix the yeast, sugar, and 1/4 cup (60 ml) warm water until the yeast is dissolved.

4.Add the yeast mixture, melted butter, and 3/4 cup (180 ml) warm water to the flour mixture. Stir until the dough comes together.
5.Turn the dough out onto a lightly floured surface and knead for 5 minutes until smooth and elastic.
6.Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for 1 hour.
7.Meanwhile, prepare the lamb topping: heat 1 tablespoon olive oil in a large skillet over medium heat. Add the onion and cook for 2-3 minutes, until softened. Add the lamb and cook, stirring occasionally, until browned.
8.Add the cinnamon, parsley, canned tomatoes, and lemon juice. Cook for 5-10 minutes, until the mixture has thickened and the flavors have melded.
9.Divide the dough into 8-10 balls.
10.Roll the balls out into thin circles and place on baking sheets lined with parchment paper.
11.Brush each circle with olive oil and top with the lamb mixture. Sprinkle with chili flakes.
12.Bake for 10-12 minutes, until the crusts are golden brown and the lamb mixture is hot and bubbly.
13.Serve hot with a side of yogurt and sliced cucumbers.
