4 cups yogurt
1/4 lemon , rind of , very finely grated
1 teaspoon lemon juice
1 teaspoon salt
1/4 teaspoon dried mint
1/4 teaspoon dried thyme
olive oil , as required

Instructions

1.Line a large strainer with a cheesecloth and set it over a large bowl.
2.Pour the yogurt into the cheesecloth and gather the corners of the cloth to form a bundle.
3.Hang the bundle over a bowl and let it drain in the fridge for at least 12 hours.
4.After 12 hours, take the bundle out of the fridge and remove the yogurt cheese ball from the cheesecloth.
5.In a small bowl, mix together the lemon rind, lemon juice, salt, dried mint, and dried thyme.
6.Roll the labana into bite-sized balls and coat them in the herb mixture.
7.Drizzle with olive oil and serve immediately or refrigerate until ready to serve.
