Ingredients

20 ounces can vegetarian refried beans
2 large very ripe avocados
1 tablespoon lime juice
1 cup sour cream
1 cup mayonnaise
1 packet taco seasoning
2 cups finely-grated sharp cheddar cheese
1 cup pitted kalamata olive , chopped
1 pint grape tomatoes , chopped and wept between paper towels
1 bunch green onion , chopped
1 jalapeno pepper ( optional )
3/4 cup cilantro , minced

Instructions

1.Preheat the oven to 350 degrees F and grease a 9x13 inch baking dish.
2.Spread the refried beans in the bottom of the dish.
3.In a small bowl, mash the avocados with the lime juice and spread on top of the beans.
4.In a medium bowl, mix together the sour cream, mayonnaise, and taco seasoning. Spread on top of the avocados.
5.Sprinkle the grated cheese over the sour cream mixture.
6.Add the chopped kalamata olives, grape tomatoes, green onion, and jalapeno (if using) in layers on top of the cheese.
7.Bake for 25-30 minutes, or until the cheese is melted and bubbly.
8.Sprinkle with chopped cilantro and serve with tortilla chips.
