Ingredients

2 1/2 lbs quinces
4 cups water
2 1/2 lbs sugar
1 lemon , juice of , the
1 teaspoon vanilla
1/2 cup blanched halved almonds
3 rose-scented geranium leaves , washed ( optional )
Kythoni Glyko is a traditional Greek dessert made from quinces and sugar syrup. The quinces are boiled in a sugar syrup for a long time until they are soft and translucent, and then served in small spoonfuls as a sweet treat. The addition of almonds and rose-scented geranium leaves gives the dessert a unique flavour and texture. Instructions

1.Peel and core quinces, reserving peels and cores.
2.Cut quinces into slices and immerse in water, along with cores and peels.
3.Add the sugar to the water, stirring until it dissolves, and bring to a boil.
4.Add quinces, sugar, and vanilla to the syrup, and cook on a medium-low heat for 1 1/2 to 2 hours.
5.Add lemon juice and blanched almonds, cook for another 5 minutes, and remove from heat.
6.Fill jars with the quince mixture and let them cool before serving.
