Ingredients

2 small eggplants , sliced
2 teaspoons salt
2 tablespoons butter
2 lbs lamb , cut in 1-inch cubes
2 onions , sliced
1/2 lb green beans , cut in half
3 small zucchini or 2 medium zucchini , sliced thick
4 medium tomatoes , peeled and quartered
fresh ground pepper
2 tablespoons chopped parsley
Kuzu guvec is a rich and hearty Turkish stew made with tender lamb, eggplant, green beans, zucchini, and tomatoes. Spiced with salt, pepper, and parsley, this comforting dish is perfect for chilly evenings or as a delicious and filling meal after a long day. Though the dish takes a bit of time to prepare and cook, it's well worth the effort and is sure to become a new favorite in your household. Serve with crusty bread, rice, or your favorite side dishes.

Instructions

1.Preheat your oven to 375 F (190 C).
2.Slice the eggplants, add salt to the pieces and let them sit for 10 minutes.
3.Rinse the eggplants and pat them dry.
4.Heat a skillet over high heat and add 1 tablespoon of butter to it. Once melted, sear the lamb cubes until brown on all sides, a few minutes per side. Repeat for all lamb chunks. Set aside.
5.In the same skillet, sauté onion until golden using another tablespoon of butter, for around 7-8 minutes.
6.Add in the green beans and zucchini and cook for a couple of minutes until vegetables are a bit soft.
7.Mix everything in a large, oven-safe pot. Add in the tomatoes and more salt and pepper to taste. Top everything with the chopped parsley.
8.Bake the Kuzu Guvec for around 1 hour, stirring once halfway through cooking.
9.Remove from the oven once done and serve with your favorite side dishes.

Kuzu guvec is a hearty, filling, and satisfying stew that is perfect for cold weather or a comforting home-cooked meal.

CONS

The dish does require quite a bit of prep time and cooking time, but the results are well worth it.
The lamb may also be a bit expensive or difficult to find in some areas.
