Ingredients

1 1/2 lbs beef
3 onions
2 tomatoes
1/4 cup vegetable oil
2 bay leaves
2 cups broth
1 1/2 teaspoons mixed spice , for kazakh and uzbek recipes from recipe of that name
1 lb bread dough
2 bunches spring onions
1 bunch fresh parsley , chopped
1/4 cup fresh basil , chopped
1/2 cup fresh dill , chopped
1 garlic clove , crushed
1/2 cup vegetable oil
1 cup yogurt
Kuyrdak is a traditional Kazakh dish that is popular throughout Central Asia. It is a hearty meal that is often served during special occasions, such as weddings and festivals. The dish is typically made with beef, onions, and tomatoes, which are cooked together in a flavorful broth and seasoned with a blend of spices. It is often served with a fresh bread, such as nan, and garnished with aromatic herbs and dollops of yogurt. Kuyrdak is a delicious and satisfying meal that is perfect for sharing with friends and family.

Instructions

1.Heat oil in a large pan. Add onions and sauté until they have softened.
2.Slice beef into thin cubes and fry in the same pan until browned.
3.Add in chopped tomatoes and bay leaves, stir and reduce the heat to low. Then pour in all of the broth and simmer for about 15 minutes.
4.In a separate pan sauté the spring onions with the mixed spice blend, then add this to the cooked meat mixture and stir well.
5.Cover and let it cook on low heat until the meat gets really soft and the sauce has thickened. Meanwhile, preheat the oven to 180℃ (350℉) and prepare the bread dough by rolling it out flat.
6.Brush the bread with garlic-infused oil and put it in the oven for about 10-15 minutes until it's golden brown. Serve the kuyrdak hot with bread and sprinkled with the chopped aromatic herbs and dollops of yogurt.
