Ingredients

2 tablespoons oil
1 1/4 cups lentils
3 cups boiling water ( or stock )
1 teaspoon salt
1 dash pepper
1 1/2 cups rice
1 cup boiling water ( or stock )
3/4 cup tomato paste
3 cups tomato juice ( or tomato sauce or pureed tomatoes )
1 green pepper , chopped
1/2 cup celery leaves , chopped
1 tablespoon sugar
1/2 teaspoon salt
1 teaspoon cumin
1/4 teaspoon cayenne pepper ( or crushed chilis to taste )
2 tablespoons oil
3 onions , sliced
4 garlic cloves , minced
Kusherie is a popular Egyptian street food that is enjoyed by millions of people across the Middle East. Instructions

1.Rinse lentils under running water until it runs clear. Strain. Heat oil in a large pan over medium heat. Add lentils, stir for 2-3 minutes.
2.Add the boiling water, salt and pepper. Bring to a boil. Reduce heat, cover and simmer for 20 minutes.
3.Rinse and strain rice, add to the pot. Add the 1 cup boiling water, stir, cover and cook over low heat for 20 minutes.
4.In the last 10 minutes of cooking, combine tomato paste, tomato juice, green pepper, celery leaves, sugar, salt, cumin, and cayenne pepper in a separate pan. Cook over medium heat for 10 minutes.
5.In a separate pan, heat oil over medium heat. Add sliced onions and cook, stirring for 2-3 minutes. Add minced garlic and cook, stirring until onions brown, for another 5-7 minutes. Turn off the heat.
6.Serve rice and lentils in a large bowl. Drizzle the tomato sauce over them and add the onions and garlic on top of the tomato sauce. Enjoy!
