8 zucchini , ends trimmed ( each approx . 6 '' long , about 3 pounds )
12 ounces ground lamb
3/4 cup instant brown rice
1 3/4 teaspoons dried marjoram , divided
1 1/4 teaspoons ground cumin , divided
1 1/4 teaspoons dried mint , divided
1/4 teaspoon ground allspice , divided
1/4 teaspoon salt
1 pinch cayenne pepper
1 can tomato sauce , preferably chunky

Instructions

1.Preheat the oven to 375 F.
2.Slice off and reserve the stem end of each zucchini.
3.Carefully scoop out the inside of each zucchini with a knife or spoon, leaving a 1/4-inch-thick shell.
4.In a mixing bowl, combine the lamb, brown rice, 1 teaspoon marjoram, 3/4 teaspoon cumin, 3/4 teaspoon mint, 1/8 teaspoon allspice, salt, and cayenne pepper. Mix well.
5.Fill each zucchini with the lamb mixture.
6.Place the zucchini vertically in a 3-quart baking dish.
7.Combine the tomato sauce, 1/2 teaspoon marjoram, 1/2 teaspoon cumin, 1/2 teaspoon mint, and 1/8 teaspoon allspice in a bowl.
8.Pour the tomato sauce mixture over the stuffed zucchini.
9.Cover the baking dish with aluminum foil.
10.Bake for 45 minutes.
11.Remove the foil and bake for another 15 minutes or until the zucchini is tender.
