1/4 cup chickpeas , soaked overnight and drained
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrot
2 italian frying green bell peppers , cored , seeded , and cut into small pieces
1 1/2 tablespoons tomato paste
1 -2 whole dried hot red chili pepper
salt , to taste

Instructions

1.Rinse the lentils, wheat berries or rice, and chickpeas and set aside.
2.In a large pot, sauté the onion, celery, and carrot until softened.
3.Add the green bell peppers and continue to sauté until all vegetables are tender.
4.Stir in the tomato paste and dried chili peppers, then add 6-8 cups of water and bring to a boil.
5.Add the lentils, wheat berries or rice, and chickpeas to the pot and reduce heat to a simmer.
6.Cover and cook until the lentils are tender, about 30 minutes.
7.Remove the dried chili peppers and season with salt to taste before serving.
