Ingredients

1 cup matzo meal
1 1/2 cups semolina ( solet in hebrew )
1 cup water
1 teaspoon salt
1 lb beef
oil ( for frying )
salt , & peppper
6 -7 garlic cloves
10 chopped scallions ( green and white parts )
olive oil
2 bunches swiss chard , chopped pazzi ( blettes in french , swiss chard in english )
lemon juice
salt
Kurdish Kubbeh Khamoustah is a traditional Middle Eastern dish that is enjoyed across many cultures in the region, from Israel to Iraq and beyond. It is similar to meatballs but with a twist- instead of breadcrumbs or rice, the meat mixture is encased in a dough made of matzo meal and semolina, giving it a unique texture and flavor. The swiss chard filling adds a freshness to the dish that balances out the richness of the kubbeh, making it a well-rounded meal that can be enjoyed at any time of day.

Instructions

1.In a large mixing bowl, combine 1 cup of matzo meal and 1 1/2 cups of semolina.
2.Slowly add in 1 cup of water and 1 teaspoon of salt, mixing until a dough forms.
3.In a separate bowl, mix together 1 lb of beef, salt, and pepper to taste.
4.Form the dough into golf-ball sized balls and create a small indentation in each ball, filling it with the seasoned beef mixture.
5.Seal the ball by pinching the edges together and shaping it into a torpedo shape.
6.Heat oil in a frying pan and fry the kubbeh until they are golden brown and cooked through, about 2-3 minutes on each side.
7.For the filling, sauté 6-7 garlic cloves and 10 chopped scallions in olive oil over medium heat for a few minutes.
8.Add in 2 bunches of chopped swiss chard and continue to cook until the swiss chard is wilted and tender.
9.Season the mixture with lemon juice and salt to taste.
10.Serve the kubbeh hot with the swiss chard filling on top.
