Instructions

1.Cook the mung bean noodle vermicelli as per the packet instructions, drain and keep aside.
2.Heat 1/4 inch of canola oil in a wok or a deep frying pan over medium-high heat. Once hot, add the prawns and cook until they turn pink and opaque for about 2-3 minutes. Transfer the cooked prawns to a plate lined with paper towel.
3.In the same wok, add a tablespoon of oil, followed by the red onions. Stir fry for 1-2 minutes or until they become soft and fragrant. Add in the kung pao sauce and mix well.
4.Finally, add in the cooked prawns along with chives and stir fry everything together for a minute or until everything is well coated.
5.Serve hot with cooked mung bean noodles and garnish with extra chives.
