Ingredients

1 lb sirloin steak , cut into cubes ( See Note below )
1 teaspoon olive oil
2 teaspoons cornstarch
1/8 teaspoon pepper
2 ounces diced green chilies
1 red pepper , cut into squares or slices
2 -3 scallions , cut into 1 inch pieces
1/2 cup canned diced bamboo shoot
2 cloves garlic , minced or chopped
1 teaspoon ginger
1 teaspoon sugar
1 tablespoon hot chili oil ( or more , for added spiciness )
3 dashes hot sauce ( optional )
2 tablespoons olive oil
1/2 cup peanuts

Instructions

1.In a small bowl, mix together 1 tsp olive oil, 2 tsp cornstarch, and 1/8 tsp pepper.
2.Toss the cubed sirloin steak (or chicken) with the mixture and let it sit for 10 minutes.
3.In a large non-stick skillet, heat 2 tbsp olive oil over medium-high heat and cook the beef (or chicken) until browned and no longer pink. Remove from pan and set aside.
4.In the same skillet, add 2 oz diced green chilies, 1 red pepper, 2 or 3 scallions, 1/2 cup canned diced bamboo shoot, 2 minced garlic cloves, 1 tsp ginger, 1 tsp sugar, 1 tbsp hot chili oil, and 3 dashes of hot sauce (optional). Cook for 2-3 minutes until vegetables are tender.
5.Add the cooked beef (or chicken) and 1/2 cup peanuts to the skillet and stir to combine for 1-2 minutes until heated through. Serve with rice or noodles.
