Ingredients

3 cans artichoke hearts ( whole )
2 teaspoons extra virgin olive oil
4 garlic cloves ( halved or quartered )
1/3 cup fresh breadcrumb
1/3 cup parmesan cheese ( freshly grated )
1/4 cup vegetable broth
1 lemon ( fresh )
1 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper ( or to taste )
1 tablespoon butter

Instructions

1.Preheat the oven to 375 degrees.
2.Drain the canned artichoke hearts, rinse them under running water, and place them in a mixing bowl.
3.Add extra virgin olive oil and minced garlic cloves to the mixing bowl and stir well to fully coat the artichoke hearts with oil and garlic.
4.Let the artichoke hearts sit for a few minutes to absorb the flavors.
5.In a separate mixing bowl, combine fresh breadcrumbs, freshly grated parmesan cheese, dried thyme, salt, and pepper. Mix all ingredients well.
6.Add the breadcrumb mixture into the artichoke mixture and mix them together well.
7.Transfer all the ingredients from the mixing bowl into a baking dish.
8.Pour the vegetable broth over the ingredients in the baking dish.
9.Slice the fresh lemon into thin slices and place them over the top of the artichoke-heart mixture. Drizzle the olive oil over the entire dish.
10.Dot the entire dish with small dabs of butter.
11.Bake the dish in the oven for 30-40 minutes, or until the top of the dish is golden brown and the dish is heated throughout.
