1 tablespoon oil
1 onion
2 garlic cloves
1 bunch spinach
4 sheets phyllo pastry
2 tablespoons butter ( melted )
3 eggs
4 tablespoons milk
salt
pepper
75 g garlic and cheese gouda cheese
1 large kumara ( sweet potato )
30 g butter
30 g parmesan cheese
Kumara Topped Spinach Pie is a delicious vegetarian dish that is great for a weeknight dinner, as well as for special occasions. The dish is made up of a layer of crispy phyllo pastry, spinach, garlic and cheese gouda cheese, and a layer of sliced kumara (sweet potato) on top. The dish is then baked until the kumara is golden brown. The combination of spinach and kumara is not only delicious but also incredibly nutritious. The dish is high in fiber, iron, and vitamins, which makes it a perfect addition to a balanced diet.

Instructions

1.Preheat oven to 180°C. Grease a baking dish with oil.
2.In a pan, heat oil over medium heat. Add chopped onion and garlic, and cook for 2-3 minutes or until softened.
3.Add spinach to the pan and stir until wilted.
4.Layer sheets of phyllo pastry in baking dish, brushing melted butter between each layer.
5.Beat together eggs, milk, salt, and pepper in a bowl.
6.Sprinkle garlic and cheese gouda cheese over the phyllo pastry in the dish.
7.Pour the egg mixture into the dish.
8.Peel and thinly slice kumara (sweet potato) into rounds. Place on top of the egg mixture.
9.Melt butter and mix in parmesan cheese. Drizzle over the top of the kumara slices.
10.Bake for 25-30 minutes or until the egg is cooked and kumara is golden brown.
