Ingredients

1 cup basmati rice
500 g kumara ( orange Sweet Potato )
3/4 cup frozen baby peas
3/4 cup zucchini
1/3 cup fresh breadcrumb
1 tablespoon ground cumin
1 garlic clove
1 egg
2 tablespoons fresh flat leaf parsley
salt & freshly ground black pepper
olive oil
Kumara (Sweet Potato) & Rice Patties are a versatile and healthy dish that can be served as a snack, appetizer, or light meal. Instructions

1.Rinse the basmati rice in a fine mesh strainer and place in a medium-sized saucepan with 2 cups of water.
2.Add salt and bring to a boil. Cover and simmer for 15-20 minutes or until cooked.
3.Peel the kumara and cut into small cubes.
4.In a large bowl, mix the cooked rice, kumara, frozen peas, zucchini, breadcrumbs, cumin, crushed garlic, and whisked egg.
5.Add parsley and season with salt and black pepper to taste.
6.Using your hands, shape the mixture into small, flat, circular patties.
7.Heat olive oil in a large skillet and cook the patties until golden brown and crispy on both sides, approximately 3-4 minutes per side.
