Ingredients

1 2/3 cups gluten-free self-raising flour
1 teaspoon caster sugar
1/4 teaspoon salt
20 g butter
1/2 cup kumara ( cooked , cold and mashed finely )
1/2 cup buttermilk
2 tablespoons water ( approximately )
2 teaspoons milk ( approximately )
2 teaspoons gluten-free self-raising flour ( extra )
Kumara (Sweet Potato) dampers are a classic recipe from Australia and New Zealand. They are a variation of the traditional damper, which is an Australian bush bread cooked in the coals of a campfire. Kumara is a sweet potato variety that is widely used in New Zealand cuisine. Its natural sweetness and creaminess make it an ideal ingredient for bread. Kumara dampers are soft, fluffy and slightly sweet. They are perfect as a snack or side dish to your main meal. You can also customize the recipe by adding herbs, cheese or other ingredients to give it your own twist.

Instructions

1.Preheat oven to 200C and line a baking tray with baking paper.
2.Sift flour, sugar and salt into a bowl.
3.Rub the butter into the flour mixture using your fingers until it resembles fine breadcrumbs.
4.Add the kumara and buttermilk and stir through until it forms a soft dough.
5.Turn the dough out onto a floured surface and knead lightly.
6.Pat it out to a thickness of 2.5cm and cut into rounds using a large cookie cutter.
7.Gather any excess dough, re-knead and cut out more rounds.
8.Place the rounds on the baking tray so that they are touching each other.
9.Mix together the water and milk and brush over the tops of the dampers.
10.Sprinkle the extra flour over the tops of the dampers.
11.Bake for 10-12 minutes or until golden brown.
12.Serve warm with butter, jam or your favourite spread.
