Ingredients

300 g kumara , cooked and mashed
350 g gruyere cheese , cut into 1cm cubes
375 g self-raising flour , sifted
40 g butter ( plus extra for greasing )
1/4 cup chopped fresh chives
2 eggs , broken into separate bowls and lightly beaten
125 ml milk ( approximately )
2 teaspoons coriander seeds
2 teaspoons cumin seeds
1/2 teaspoon crushed dried chili
2 1/2 tablespoons finely chopped cashews
Kumara and Gruyere Wedges are a classic party snack that is loved by adults and kids alike. The recipe consists of a soft and pliable kumara dough with intense spice flavors of coriander and cumin seeds along with some dried chili. The recipe also features aromatic fresh chives and finely chopped cashew nuts that add flavor and nutrition to the dish. Gruyere cheese brings in the gooey, melted goodness in between the dough that complements the dish in a perfect way. This appetizer is easy to make and perfect for any party.

Instructions

1.Preheat your oven to 200°C and grease a baking tray with butter.
2.In a large mixing bowl, combine the mashed kumara, flour, butter, chives, coriander seeds, cumin seeds, dried chili, and chopped cashews. Mix well to form a sticky dough.
3.Gradually add the milk to this mixture, stirring constantly until a soft and pliable dough is formed.
4.Lightly flour your work surface and knead the dough for 1-2 minutes, until it is smoother and easier to handle.
5.On a lightly floured surface, roll the dough into a rectangle approximately 2cm thick.
6.Sprinkle the cubed gruyere cheese on one half of the rectangle, leaving about 1cm from each side.
7.Fold the other half of the dough over the cheese and press the edges together to seal.
8.Transfer the wedge to the greased baking tray and bake for 25-30 minutes or until it's nicely golden.
9.Let it slightly cool before slicing it into wedge shapes.

PROS

Kumara and Gruyere Wedges are perfect appetizers for a party and are delicious to munch on.

These wedges are soft on the inside, crispy on the outside with melted gooey cheese in between that will leave you wanting more.
