75 g margarine or 75 g butter
250 ml water
150 g flour , sifted
100 g sugar
1/4 teaspoon salt
1 teaspoon vanilla
6 eggs
450 ml coconut cream
100 g raisins
100 g coconut , flesh , slivered

Instructions

1.Preheat oven to 160C/320F.
2.In a saucepan over medium heat, melt margarine or butter. Add water, sifted flour, sugar, salt, and vanilla, then whisk until smooth. Remove from heat.
3.Beat eggs into the mixture, one at a time, until well combined. Stir in coconut cream, raisins, and slivered coconut.
4.Pour batter into a 20cm square cake tin lined with baking paper and bake for 1 hour or until a skewer comes out clean when inserted into the centre of the cake. Allow it to cool before serving.
