Ingredients

1 1/2 kg pork roast , meat with skin on
2 teaspoons butter
1 small carrot
1 medium onion
1 garlic clove
500 ml wheat beer ( can use any other sweeter type beer ) or 500 ml ale ( can use any other sweeter type beer )
1 teaspoon instant gravy
2 tablespoons sour cream
salt
seasoning salt
water
2 tablespoons cornstarch ( optional , depends on how thick you like your gravy )

Instructions

1.Preheat your oven to 230°C or 446°F.
2.Using a sharp knife, score the skin of the pork roast in small criss-cross lines or squares.
3.Rub the meat with butter, salt and seasoning salt.
4.Place the carrot, onion, garlic, and some water in the bottom of a high-sided roasting tin. Place a wire rack over the vegetables in the roasting tin.
5.Place the pork roast on the wire rack, skin side up.
6.Pour the beer over the meat and into the roasting tin.
7.Roast the meat in the preheated oven for about 30 minutes, then reduce the oven temperature to 200°C or 392°F.
8.Roast the meat for an additional 1-1 1/2 hours until done. The skin should be crispy and the meat should be cooked through.
9.Remove the roast from the oven and allow to rest for 10 minutes. Meanwhile, prepare the gravy.
10.Combine the instant gravy and sour cream in a small bowl.
11.Mix well and add to the remaining juices in the roasting tin.
12.Mix everything together and cook on low heat until thickened. Add the cornstarch if desired. Serve the meat with the gravy and enjoy!
