Ingredients

1/2 cup finely chopped onion
1 can green chilies , drained
3 cups cooked shredded chicken
1 cup chicken broth
1/2 cup salsa
1/2 tablespoon McCormick 's Montreal Brand steak seasoning ( I know it 's a chicken recipe , but I like the steak seasoning )
1 teaspoon cumin
1/2 tablespoon adobo seasoning
1 teaspoon garlic salt
8 flour tortillas
1 teaspoon butter
extra virgin olive oil
2 cups mexican queso blanco
Krista's Kickin' Chicken Chimichangas are a zesty and flavorful twist on the classic Mexican dish. This recipe combines tender shredded chicken with a spicy blend of seasonings, green chilies and salsa, all rolled up in a flour tortilla and baked until crispy. The result is a delicious and satisfying meal that is perfect for lunch, dinner or even a party appetizer. These chimichangas are best served hot and fresh out of the oven, and can be topped with sour cream, guacamole, or your favorite hot sauce.

Instructions

1.In a large skillet over medium heat, add 1 tablespoon of olive oil and sauté the onions until they are translucent.
2.Add the green chilies and sauté for an additional minute.
3.Add the shredded chicken, chicken broth, salsa, McCormick's Montreal steak seasoning, cumin, adobo seasoning, and garlic salt. Mix well.
4.Reduce heat and simmer for 10-15 minutes until the chicken is fully coated in the sauce.
5.Preheat the oven to 350°F.
6.Melt the butter in a small saucepan over low heat.
7.On a separate skillet or griddle, lightly fry each tortilla on both sides with butter until they are lightly golden.
8.Fill each tortilla with the chicken mixture, roll tightly, and place seam-side down on a baking sheet.
9.Brush the tops of the tortillas with the remaining melted butter.
10.Bake for 5-10 minutes until the tortillas are crispy and lightly browned.
11.Remove from the oven and serve with a sprinkle of queso blanco on top.
