1 lb herbs ( chervil , watercress , spinach , sorrel , dandelion and scarlet pimpernel , choose three )
4 tablespoons butter
1 large onion , chopped
1 quart water or 1 quart vegetable stock
1 large potato , peeled and chopped in to small cubes
salt , to taste
black pepper , to taste
crouton ( optional )
