Ingredients

2 lbs zucchini , even sized
cold water
sea salt
1 medium onion , finely chopped
1 tablespoon clarified butter or 1 tablespoon plain butter
1 tablespoon pine nuts
8 ounces ground beef
1/4 cup short-grain rice
1 tablespoon chopped parsley
1/2 teaspoon ground allspice
sea salt
fresh ground black pepper
canola oil , if ground beef is lean as needed
1 1/4 cups cold water
goats milk yogurt ( only or it will curdle ) or stabilized yogurt ( only or it will curdle )
2 garlic cloves , crushed
1 teaspoon dried mint

Instructions

1.Cut the top off the zucchini and reserve. Scoop out the flesh with a small spoon and set aside. Rinse and salt the hollowed out zucchini, then rinse and salt the tops as well.
2.Preheat the oven to 375 degrees F (190 degrees C).
3.In a skillet, sauté the onion in plain butter until softened. Add the pine nuts and sauté for another minute. Stir in the ground beef, reserved zucchini flesh, rice, parsley, allspice, sea salt and black pepper. Sauté until the beef is no longer pink. If the beef mixture is lean, add canola oil as needed.
4.Stuff the zucchini with the beef mixture. Place zucchini and tops in a deep-sided baking dish or Dutch oven with the 1 1/4 cups cold water. Pour the goats milk yogurt over the tops and sprinkle on the crushed garlic and dried mint. Cover tightly and bake for 1 hour or until tender.
