1 head cauliflower , cut into florets
2 eggs
1/3 cup plus 2 tablespoons fresh breadcrumb
1/4 cup parsley , finely chopped
1/2 cup kefalotyri , grated
salt and pepper
1/3 cup flour , for dredging
1/3 cup olive oil
1 tablespoon butter
2 garlic cloves , minced
3 tablespoons capers
1/4 cup sherry wine
3/4 cup cream , light
salt and pepper
Kounoupidokeftedes are savory cauliflower fritters that originate from Greece. These crispy, bite-sized treats are flavored with fresh parsley and salty kefalotyri cheese, then fried until golden brown to make for an irresistible appetizer. Serve them with a creamy garlic and caper sauce for a delicious party snack or appetizer at any dinner party.

Instructions

1.Boil the cauliflower florets in salted water for 10 to 12 minutes or until tender.
2.Drain the water and mash the cauliflower with a fork until it is very fine and set aside to cool.
3.In a mixing bowl, beat 1 egg and add the breadcrumbs, parsley, kefalotyri, salt and pepper. Mix thoroughly.
4.Add the cooled mashed cauliflower to the mixing bowl and mix well until everything is combined.
5.Shape the mixture into small balls, approximately 1 tablespoon in size.
6.In another mixing bowl, add the flour and coat each ball evenly.
7.Heat the olive oil and 1 tablespoon butter in a large non-stick frying pan over medium-high heat until it shimmers.
8.Fry the coated balls in the frying pan, flipping them gently, until golden brown, about 2 to 3 minutes on each side.
9.Remove the fritters from the frying pan with a slotted spoon and place them on a plate lined with paper towel to drain excess oil.
10.Heat the remaining butter in the frying pan over medium-high heat. Add the minced garlic and capers, sauté for 1 minute.
11.Pour in the sherry wine and bring to a boil. Cook until the liquid is reduced by half, around 1 to 2 minutes.
12.Add the cream and whisk until well combined. Cook until the sauce thickens, letting it simmer for around 2 minutes while stirring frequently.
13.Beat the remaining egg in a bowl and serve as an individual dip for the Kounoupidokeftedes fritters. Enjoy!
