Ingredients

2 tablespoons butter
2 1/2 tablespoons finely chopped onion

Sauce :
1/4 cup butter
1/2 cup all-purpose flour
2 cups chicken broth
1/4 cup butter
4 ounces button mushrooms , quartered
1 1/2 cups finely chopped onion
1 teaspoon fresh-squeezed lemon juice
2 hard-cooked eggs , chopped
1/4 cup chopped fresh dill
12 cabbage leaves
6 salmon fillets , skin removed
salt and ground black pepper to taste
2 packages frozen puff pastry , thawed
1 egg
1 tablespoon water

Instructions

1.Preheat oven to 425°F (220°C).

5.Gradually add the chicken broth, stirring constantly until you have a smooth sauce.
6.In another pan, melt 1/4 cup butter and add the mushrooms and onions. Cook over medium heat until softened.
7.Add the lemon juice, eggs, and dill. Mix well and set aside.
8.Blanch the cabbage leaves in boiling salted water for 2 minutes, then cool in ice water to stop cooking.
9.Roll out the puff pastry until 1/8-inch thick, then cut into rectangles.
10.Place one half of each pastry rectangle onto a baking sheet lined with parchment paper. Cover the surface with cabbage leaves, then spread some risotto, the salmon fillet, the mushroom mixture, and more risotto over each pastry base.
11.Cover the filling with the other half of the pastry rectangles, and press edges to seal well. Cut a few small slits in the top of each pastry.
12.Beat together the egg and water, then brush onto the pastry.
13.Bake for 30 to 45 minutes or until pastry is golden brown and cooked all the way through.
