Ingredients

1 tablespoon dried yeast , not instant
3/4 cup tepid water
2 cups all-purpose flour
1/2 teaspoon sea salt
1 cup sugar , which will be divided later , plus additional sugar for rolling out the pastry
1/2 cup salted butter , cut into 1/2-inch pieces and chilled
2 -3 tablespoons additional salted butter , melted
Kouign Amann (Breton Caramelized Cake) is a traditional pastry from the Brittany region of France. This indulgent treat is made from a laminated dough, similar to croissants, but with added sugar and sea salt. The pastry is then caramelized during baking, which creates a deliciously buttery and flaky crust. While it's a bit time-consuming to make, Kouign Amann is a deliciously unique pastry that's perfect for special occasions or tea time with friends.

Instructions

1.In a small bowl, mix the yeast and tepid water and let sit for 5 minutes.
2.In a large mixing bowl, combine the flour, sea salt, and 1/4 cup of the sugar.
3.Mix in the chilled butter, working quickly and being careful not to overmix.
4.Add the yeast mixture and stir until well combined.
5.Place the dough onto a floured surface and roll it out to 1/4 inch thickness.
6.Sprinkle the remaining sugar over the top of the dough, then fold the dough in half and roll it out again.
7.Repeat the sugar, folding, and rolling process 2 more times.
8.Roll the dough out one final time and cut it into 12 circles.
9.Grease a muffin tin with melted butter and place one circle of dough in each well.
10.Brush the tops of the dough circles with melted butter.
11.Allow the dough to rise for 30 minutes.
12.Preheat the oven to 375F.
13.Bake the Kouign Amann for 25-30 minutes, or until golden brown.
