Instructions

1.Wash and trim the green beans. Peel and slice the carrots into quarter-inch pieces. Peel and cut the potatoes into one-inch pieces. Peel and slice the onion into thin strips.
2.Preheat the oven to 375 degrees F.
3.Spread the vegetables in layers in a large baking dish.
4.Add the whole garlic cloves and sliced tomatoes.
5.Drizzle with olive oil and sprinkle with dried oregano, salt, and bay leaves.
6.Mix the water and tomato paste together and pour over the vegetables.
7.Cover with aluminum foil and bake for an hour and 45 minutes.
8.Remove the foil and bake for an additional 15 minutes to allow the vegetables to caramelize.
