Ingredients

3/4 cup brown lentils
5 cups water
salt , to taste
1/2 cup fideo vermicelli
2 tablespoons olive oil
1 cup rice ( I used white basmati )
1 3/4 cups water ( or vegie or chicken broth )
salt , to taste
fresh cilantro , for garnish ( my addition-for color )
2 large onions , thinly slivered
2 -4 tablespoons olive oil
1 small onion , chopped
2 tablespoons olive oil
1 garlic clove , minced
1 can whole tomatoes ( use fresh toms when in season )
1/2 teaspoon ground cumin
salt
3 garlic cloves , finely minced

1/3 cup wine vinegar ( recipe did n't specify which , but I used red wine vinegar )
1/2 cup olive oil
1 -2 serrano chili , seeded and minced
Koshari Deluxe is a popular Egyptian dish that is often enjoyed as a street food or casual meal at home. Instructions

1.Rinse the lentils and add them to a pot with 5 cups of water and salt to taste. Bring to a boil, then lower heat and simmer for 20-30 minutes until lentils are tender.
2.In a separate pot, heat 2 tablespoons of olive oil on medium heat. Add the fideo vermicelli and stir until golden brown. Add the rice, broth or water, and salt to taste. Bring to a boil then lower heat and cover. Cook for 18-20 minutes until rice is tender.
3.In a frying pan, heat 2-4 tablespoons of olive oil on medium heat. Add the thinly slivered onions and fry until golden brown. Remove from the pan and set aside.
4.In the same frying pan, add the chopped onion and minced garlic. Saute for a few minutes until fragrant. Add the can of whole tomatoes, ground cumin, and salt to taste. Simmer for 10-15 minutes, stirring occasionally.
5.In a small bowl, combine the minced garlic, 1/4 teaspoon of cumin, wine vinegar, olive oil, and serrano chili. Mix well.
6.To assemble the dish, start by spreading the lentils on a large platter. Layer the rice on top, followed by the tomato sauce. Top with the fried onions and fresh cilantro. Drizzle the garlic and chili dressing over the top. Serve and enjoy!
