Ingredients

1 kg zucchini
1/2 kg beef
2 onions , finely chopped
cooking oil
salt
pepper
1 1/2 cups rice
3 cups tomato juice
2 tablespoons cooking oil

Kosa Mahshiya ? Zucchini, Stuffed is a traditional Lebanese food that is loved by most people because of its delicious taste and health benefits. Instructions

1.Cut off the head of the zucchini and remove its pulp and seeds. Set it aside
2.In a heated skillet, cook chopped onions with some oil.
3.Add minced beef to the skillet and season with salt and pepper.
4.Add rice, tomato juice and a small quantity of water. Mix it well and let it simmer for 10 minutes.
5.Stuff every zucchini with the mixture and add them to the skillet with some water on its base. Cover it and let it cook over low heat for 45 minutes until zucchinis are tender.
6.Serve hot after garnishing with fresh parsley or mint.
