Ingredients

1 cup lukewarm milk
4 tablespoons melted butter ( room temperature )
1 package dry yeast
1/2 cup sugar
1 teaspoon salt
1 tablespoon freshly ground cardamom
1 beaten egg plus 1 beaten egg for final glaze
4 -5 cups all-purpose flour
pearl sugar or rock sugar , for dusting
1/4 cup melted butter
3/4 cup packed brown sugar
2 tablespoons cinnamon
Korvapuusti is a traditional Finnish pastry that is a staple of Finnish cuisine. It is a type of cinnamon roll that is fluffier and softer than the American version, with a rich cardamom flavour that sets it apart. The name 'Korvapuusti' is derived from the Finnish word for 'slap on the ear,' which might sound odd, but it refers to the shape of the pastry, which is rolled and slapped together to create a unique texture. This pastry is perfect for breakfast, loved by Finnish people of all ages. It's often served with coffee, tea or hot chocolate, and it's best enjoyed fresh and warm from the oven.

Instructions

1.Mix together milk, butter, sugar, salt, cardamom, the beaten egg in a mixing bowl.
2.Add yeast and mix it well with the mixture.
3.Add flour, one cup at a time and mix it until it forms a dough.
4.Cover with a damp cloth and leave it in a warm place for around 1 hour, until it doubles in size.
5.Mix the cinnamon and brown sugar together in a small bowl.
6.Take out the dough on a flour-dusted surface and roll it out into a rectangle.
7.Spread melted butter over the dough, followed by the cinnamon and sugar mixture.
8.Roll the dough into a log, with the filling on the inside, then cut it into 2-centimetre slices.
9.Preheat the oven to 425°F and line a baking sheet with parchment paper.
10.Arrange the cinnamon rolls on baking sheet and let them rise for 15 minutes.
11.Brush the rolls with beaten egg and dust with pearl sugar.
12.Bake for 12 to 15 minutes, until golden in colour.
