Instructions

.Rinse rice until the water runs clear. In a saucepan, combine rice and water and bring to a boil over high heat. Reduce heat to low and simmer, covered, for 20 minutes.
.In a small sauté pan, heat the cider vinegar over low heat. Add cooked rice and toss until evenly coated. Let cool to room temperature.
.In a small bowl, mix the well-beaten eggs with 1 tablespoon of soy sauce and 3 tablespoons of water.
.Heat vegetable oil in a large nonstick pan over medium-high heat. Sauté onion until softened. Add beef and cook until browned. Transfer mixture to a mixing bowl.
.In the same pan, cook the egg mixture until fully cooked and golden brown. Let cool, then slice into thin strips.
.In a mixing bowl, combine the tuna with 1 tablespoon of soy sauce.
.To assemble sushi, place a sheet of nori onto a sushi mat. Spread a thin layer of rice over the top, leaving a 1-inch border at the top. Arrange some of the beef mixture, tuna, egg strips, carrot, and cucumber on top of the rice. Roll up the sushi, pressing firmly, and seal the top border with water.
.Repeat with remaining ingredients, adding a few pieces of chard to each sushi roll for extra crunch.
