Instructions

1.Rinse the rice thoroughly and add it to a saucepan with 3 cups of water. Add a pinch of salt to the water and stir.
2.Bring the rice to a boil over high heat.
3.Lower the heat, cover, and simmer until the rice is tender and the water has been absorbed, about 20 minutes.
4.In a small bowl, whisk together the soy sauce and brown sugar. Set aside.
5.Season the sliced steak with salt and pepper.
6.Heat the vegetable oil in a wok or large skillet over high heat.
7.Add the sliced steak to the hot wok or skillet and cook until browned, about 3-4 minutes.
8.Add the sliced shiitake mushrooms to the wok or skillet and cook for another 2-3 minutes until tender.
9.Divide the cooked rice evenly between four bowls. Top each bowl with the cooked beef and mushrooms, then add a handful of baby spinach on top of each bowl.
10.Fry the eggs in a separate pan or skillet, over easy or sunny side-up as preferred, and place one egg on top of each bowl.
11.Serve immediately and drizzle each bowl with the soy sauce/brown sugar mixture before eating.
