1 quart peanut oil for frying , or as needed
4 pounds chicken wings
2 tablespoons lemon-pepper seasoning , or to taste ( optional )

Instructions

1.In a large bowl, stir together the soy sauce, brown sugar, ketchup, barbecue sauce, garlic, rice wine vinegar, chile-garlic sauce (if using), black pepper, sesame oil, and ginger until the sugar is dissolved.
2.In a small bowl, mix together the cornstarch and water to form a slurry.
3.Heat the peanut oil in a large deep-sided skillet to 375 degrees F (190 degrees C).
4.While the oil is heating up, pat the chicken wings dry with paper towels and season them with the lemon-pepper seasoning (if using).
5.Once the oil is hot, carefully add the chicken wings in batches and fry them for 8-10 minutes, or until the skin is crispy and golden brown and the internal temperature of the chicken reaches 165 degrees F (74 degrees C).
6.Using a slotted spoon or spider strainer, remove the wings from the oil and transfer them to a wire rack set over a baking sheet to drain.
7.In a large bowl, toss the wings with the sauce until well coated.
