Ingredients

1 cup sushi rice
6 baby squid , cleaned
2 tablespoons shaoxing rice wine or 2 tablespoons sake
2 tablespoons gochujang chili paste
2 teaspoons sugar
1/4 teaspoon toasted sesame oil
2 teaspoons peanut oil
6 baby corn or 1/4 lb green beans , cut in 1/2-inch pieces
3 large scallions , sliced

Instructions

1.Rinse the rice two or three times in cold water until the water runs clear. Then put the rice and 1 1/2 cups cold water in a pan and bring to a boil.
2.Once it comes to a boil, cover the pan with a tightly fitting lid, turn the heat down to low, and cook for 18 minutes.
3.Turn off the heat and let the rice stand, still covered, for another 5 minutes.
4.After 5 minutes, fluff the rice with a fork before dividing into bowls.
5.Meanwhile, cut the squid bodies into 1cm rings and separate the tentacles.
6.Heat a wok over a high heat and add the peanut oil.
7.Once hot, add the squid and stir-fry for a minute or so.
8.Then add the baby corn or green beans and the whites of the scallions.
9.Stir-fry for another minute before adding the shaoxing or sake, chilli paste, sugar and sesame oil.
10.Toss quickly then add the scallion greens and take off the heat. Give everything a toss then serve with the rice.
