Ingredients

4 lbs beef short ribs , flanken-cut ( across the bones )
1 1/2 cups soy sauce
3 tablespoons sesame oil
2 tablespoons minced garlic
1 tablespoon minced fresh gingerroot
1 teaspoon ground ginger
1/4 cup brown sugar
2 1/2 cups water
1/2 cup rice wine
1/2 cup pear , peeled and grated
1 kiwi , peeled and mashed
2 teaspoons table salt
1 pinch ground black pepper
1 carrot , cut into large dice
2 potatoes , peeled , cut into large chunks
1/2 cup chopped green onion
1 yellow onion , cut into large dice
1 cup chestnuts ( optional )
1/2 cup shiitake mushroom , sliced ( optional )
Korean Braised Short Ribs, also known as Galbi or Kalbi, is a classic Korean beef dish that is typically reserved for special occasions and celebrations. The marinade used in this recipe features a blend of soy sauce, sesame oil, garlic, ginger, and other flavorful ingredients. This results in a dish that is extremely tender and full of flavor, and pairs perfectly with steamed rice and Korean side dishes such as kimchi and pickled vegetables. Instructions

1.In a large bowl, combine the soy sauce, sesame oil, minced garlic, minced gingerroot, ground ginger, brown sugar, water, rice wine, grated pear, mashed kiwi, salt, and pepper. Mix well.
2.Place the beef short ribs in a large, deep pot or dutch oven. Pour the marinade over the ribs, making sure they are fully covered. Marinate for at least 2 hours, or overnight for best results.
3.After marinating, add the diced carrots, chopped green onion, diced yellow onion, sliced shiitake mushrooms, and optional chestnuts to the pot. Bring the mixture to a boil over high heat.
4.Reduce the heat to low and let the ribs simmer for 2-3 hours, or until the meat is tender and falls off the bone.
5.Once the meat is tender, add the peeled and chopped potatoes to the pot. Let the potatoes cook for an additional 15-20 minutes, or until they are soft and fully cooked.
6.Serve the Korean Braised Short Ribs hot, with steamed rice and your favorite Korean side dishes.
