Ingredients

3 tablespoons sugar
1/4 cup soy sauce
1/4 cup sherry wine
1 -2 tablespoon hot sauce ( Sriracha , or your favorite hot sauce to taste )
1 tablespoon mirin ( or 1 Tbsp honey )
3 garlic cloves , finely chopped
1/2 small onion , grated
3 scallions , finely chopped
1 tablespoon sesame seeds
1 tablespoon sesame oil
1/2 Asian pear , peeled and chopped
1 1/2 lbs beef short ribs , bone-in ( about 4 )
2 small potatoes , peeled and cut into chunks
2 medium carrots , peeled and cut into chunks
Korean Braised Short Ribs, or Galbi Jim, is a classic Korean dish that originated from the royal court cuisine during the Joseon Dynasty. This dish is made with beef short ribs, marinated in soy sauce and a unique blend of spices that include hot sauce, mirin, garlic, onions, scallions, sesame seeds, and Asian pear. The beef is slowly braised in the marinade with hearty vegetables, making it a warm and comforting dish. Instructions

1.Preheat oven to 300°F.
2.Mix sugar, soy sauce, sherry wine, hot sauce, mirin or honey, garlic, onion, scallions, sesame seeds, sesame oil, and Asian pear in a bowl.
3.Cut the short ribs into pieces, about 3 inches long and 1 1/2 inches wide.
4.Arrange them in a single layer in a large Dutch oven or ovenproof pot.
5.Pour the marinade over the ribs.
6.Add potatoes and carrots on top.
7.Cover the pot with a lid.
8.Place the pot in the oven and cook for 2 hours.
9.Remove lid and cook for another 30-60 minutes in the oven until the short ribs are tender and the sauce is thickened. Serve hot with rice.
