Ingredients

finely chopped fresh coriander ( cilantro )
1 cup chopped scallion , including green parts
1 tablespoon shelled walnuts , roughly chopped
1 cup shredded spinach leaves
1 tablespoon barberries ( original recipe specified dried cranberries )
1 tablespoon self-rising flour ( I added 1/4 teaspoon of baking powder to 1 tablespoon of flour )
10 eggs
1/8 teaspoon saffron thread
salt & freshly ground black pepper
3 -4 tablespoons cooking oil ( I used grape seed oil )
Kookoo (kuku)-ye sabzi is a traditional Persian dish, often enjoyed during family gatherings and holidays. It is a type of frittata or omelet, but instead of cheese and meat, it is made with fresh herbs and vegetables, such as spinach, coriander, and scallions. The addition of saffron gives it a unique and rich flavor, while the barberries and walnuts provide crunch and tartness. It is served with plain yogurt and bread.

Instructions

1.In a large bowl, whisk the eggs until well beaten.
2.Add the chopped coriander, scallions, walnuts, shredded spinach, barberries, saffron, self-rising flour, salt and pepper to the eggs.
3.Mix everything together until well incorporated.
4.In a large non-stick skillet, heat the oil over medium-high heat.
5.Once heated, add the egg mixture to the skillet.
6.Reduce the heat to medium and cook for 8-10 minutes, or until the bottom is golden.
7.Flip the kookoo (kuku) using a plate or lid to help, and continue cooking for an additional 5-8 minutes, or until the other side is golden as well.
